Maple Almond Butter Cookies

Living with food allergies is no fun....but we're learning to find some creative recipes. What's the thing I miss the most? Cookies!!! So, of course, cookie recipes are the first I've tried to find and adapt. Today, I was successful! After eating two cookies, one of my toughest critics (my 3-year-old) asked if we could be the cookie monster family. Later I'll have to try out these cookies on the rest of the family, if I don't eat them all first.

Here's the recipe that I adapted from the Sweet and Natural Blog.

1/2 cup organic almond butter
1/2 cup maple syrup
3 T vegetable oil (I used olive oil, but you could probably use coconut oil too.)
1 t vanilla extract
1 cup gluten free flour blend (I added some extra teff flour so the dough wouldn't be too soupy)
1/2 t baking soda
1/2 t salt
You could add almonds or chocolate chips......

Preheat oven to 350. In a large bowl, combine almond butter, maple syrup, oil, and vanilla extract and blend well. In another bowl combine the flour, baking soda, and salt. Add to wet mixture and mix until just blended (adding in your extras). Let sit for 5 minutes. Roll into little balls and flatten slightly. Bake for 8-10 minutes.

*Note-When rolling the dough, slightly dampen fingers to keep dough from sticking to hands. (Learned this one the hard way. Sticky sticky sticky!!)

Yummy! I think I've already eaten 5 or maybe 6..........
