Chocolate Cake
1 3/4 cup flour blend
1/2 teaspoon xanthan
1 cup sugar
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup shortening
1 1/2 teaspoons vanilla extract
1 Tablespoon vinegar
1 cup cold water
Whisk together dry ingredients in large bowl.
Add remaining ingredients and stir until smooth.
Pour into greased 9-inch square baking pan.
Bake at 350 for 30 minutes or until cake tester comes out clean.
Frost or sprinkle with powdered sugar.
