{Allergy Free} Blueberry Donuts

These are full of fresh blueberry flavor and are now my favorite donuts!  The glaze on top is the best part!



Blueberry Donuts

1 1/2 cups flour
1 1/2 tsp baking powder
3/4 tsp xanthan gum
1/2 tsp sea salt
1/2 tsp nutmeg
1/2 cup brown sugar
4 T Earth Balance Soy Free
1 1/2 tsp egg replacer whisked with 2 T rice milk
1/2 cup vanilla hemp milk
1/4 cup frozen blueberries (I use wild Maine blueberries which are smaller - Wyman's brand)

Icing

1/8 cup frozen blueberries
1/2 tsp lemon juice
powdered sugar

Whisk together first 6 ingredients.
Cut in the chilled Earth Balance until the mixture resembles fine crumbs.
Put blueberries in microwave for 30 to 40 seconds until soft.
Whisk in the egg replacer and milk to the blueberry mixture.
Add the blueberry mixture to the flour and blend until just combined.
Put batter in ziploc bag and snip off one end and pipe the batter into greased donut pans.
Bake at 350 for 10-12 minutes.
Cool on wire racks.

To make icing:
Microwave blueberries for 30-40 seconds until soft.
Mash with a fork and add lemon juice.
Whisk in powdered sugar until the mixture is the consistency of a glaze.
Dip the baked donuts into the glaze.

Makes 12 donuts.
